History of Wisconsin Cheese

Nature set the stage for America's Dairyland during the last Ice Age, when mountainous glaciers cut through Wisconsin and left a countryside of rolling hills and lush pastureland. Millions of years later, when European immigrants migrated west, they found the nation's heartland, which reminded many of their homelands, suited dairy farming, and they soon produced an abundance of top-quality milk. To preserve excess milk, farmers made cheese. The move from producing cheese for family use to making cheese to sell is history.
Beginning in the early 19th century, when Western Europeans first settled this lush, central plains state, cheesemakers extolled the quality of Wisconsin's abundant milk supply for old-world cheesemaking techniques. The results began a tradition of excellence that has characterized cheese production in the state for over a century and a half. Thanks to pioneers from Germany, France, Switzerland, Holland, Italy, and Scandinavia, and the industry's cutting-edge dairy science, Wisconsin is the leader for blending innovation and the art of cheesemaking.
